Deliberate mistake: When the girls are on the beach, Carrie's narration says "It was a sunny day", but instead it is a grey and cloudy one. Surely the filming schedule was tight and they had to cope with that day's weather.
Continuity mistake: During breakfast, when Charlotte is telling about her boyfriend falling asleep and asks her friends to please help her, Carrie's arms position is inconsistent between the side and front shots: Up/down, arms crossed with left hand over right arm/ left hand vanished with right arm bare. Continuity mistake: When Carrie is ordering her breakfast Charlotte is looking at her, her right hand on her head. Her fingers are extended or not depending on the angle.

Answer: I'm a long-time fan of the show, having re-watched it many times, and I definitely remember slightly different dialogue at the end of that episode than what's on my DVD. I'm afraid I have no idea why this change might have been made or any other info, but you're not insane.
