Continuity mistake: Will walks into the blacksmith shop, takes his jacket off and tosses it onto the stones near the fireplace. His jacket lays differently on the stones in some shots throughout this scene. These two shots are examples: when Jack says, "Crossing blades with a pirate," and when Jack jumps off the stones after spraying Will with the soot. (00:22:55 - 00:26:20)
Continuity mistake: When Jack first confronts Will at the blacksmith shop, seen behind Jack, hanging on the stone wall near the fireplace are iron masks and other paraphernalia. Later, when Jack sprays the soot at Will, the iron masks and paraphernalia are arranged differently on the wall. (00:23:00 - 00:26:15)
Continuity mistake: At the blacksmith shop, there is a wicker basket with rope lying at the top of it located near the steps and the cart. This rope is positioned differently in the basket throughout this scene. Some examples are: in the shot right after Will says, "You threatened Miss Swann," then when Jack tosses Will's red hot sword away, and in the close-up of the cart slipping off the broken bench. (00:23:00 - 00:25:10)
Continuity mistake: When Jack first walks into the blacksmith shop, standing at the doorway he looks around. The grindstone is seen in the distance and there is NO sword leaning on it. Then Will says, "You threatened Miss Swann," and in the following few shots there IS a sword leaning on the grindstone. After Jack says, "You need to find yourself a girl mate," he reaches overhead, pulls out a mallet and Will ducks. The grindstone is seen and again there is NO sword leaning on the grindstone. Neither Jack nor Will touched the grindstone. (00:23:05 - 00:24:50)
Continuity mistake: At the blacksmith shop, one end of the cart that Jack and Will duel on later is resting on a wood bench. In the close-up shot of their feet, just before Jack says, "Ta," the edge of the cart is flush against the edge of the bench. In the wide shots, before and after, the edge of the cart is in the middle of the bench. This has nothing to do with the angle of the camera. (00:23:10)
Continuity mistake: Before Jack says, "Ta," there's a close-up of their feet and there's a 2x4 edge on the cart. Later, Jack tosses the mallet at Will, who ducks down, the cart's seen and there are two strips of wood as the edge. When Jack flips a plank, it smacks Will in the face, he falls and that end of cart's seen and now there's no finished edge. When the barrels fall on the edge of the cart, we see the 2x4 edge again. In many shots throughout the scene the edge changes. Also, in a couple of shots the edge has a cut out in the corner, for the wire they used. (The wire can be seen on Disc 2.) (00:23:35 - 00:25:30)
Continuity mistake: Jack says, "That is a wonderful trick. Except, once again..." as he walks down the sloped cart. Behind him to his left are a chair, a barrel and between the two is a miniature ladder and some objects leaning on the wall. When Will cuts the rope of the overhead barrels, Jack (stuntman Tony Angelotti) stands on the cart and the ladder and other objects are not leaning on the wall between the chair and barrel. (00:24:00 - 00:25:50)
Continuity mistake: Jack says, "That is a wonderful trick..." and hanging on the wall over the chair are a saw and a semi-circular tool and the saw lies over the tool. Later Jack falls when freeing himself from the sword embedded in the rafter, he stands up and climbs onto the cart again. Behind him are the saw and semi-circular tool, but the tool is over the saw now. Then later when Norrington's men shake the door to try to enter, the saw lies over the tool again. (00:24:00 - 00:25:45)
Continuity mistake: As Jack and Will duel, the amount of closed buttons on Will's vest changes. After Jack says, "And now you have no weapon," three buttons are closed. When Jack says, "You need to find yourself a girl mate," four buttons are closed. Then up on the beams, in one of the first shots, there are three buttons closed. Coming off the beams, hanging upside down, four buttons are closed again. (00:24:15)
Continuity mistake: Just after Jack pulls the red hot blade out of Will's hand, Will does a somersault and in the close-up he grabs hold of another sword and swiftly points it up. In the following wide shot Will is just grabbing the sword again. (00:24:25)
Continuity mistake: In the blacksmith shop, Will grabs a sword out of the fire and fights Jack with a red-hot blade. Jack flings the end of his handcuff chain around Will's sword which IS still glowing red, grabs the blade, and yanks it out of Will's hand. The blade is no longer glowing red as it flies out of Will's hand and through the air. The blade could NOT have cooled that quickly. (00:24:25)
Continuity mistake: Jack and Will duel on the cart and in a side shot, the FIRST time Will crosses his two swords in front of him below his waist, the blade in his left hand is on top of the blade in his right hand, then in the following front shot, the blade in his right hand is now on top of the blade in his left hand. (00:25:15)
Continuity mistake: As Jack and Will are duelling while standing on the cart, and then up on the beams, in wide shots, Will's hair is pulled back perfectly in the ponytail, but in the close-up shots he has loose hair on the sides that is not held in the ponytail. This type of thing occurs numerous times in the film. (00:25:20)
Continuity mistake: When Jack and Will are dueling in the blacksmith shop on the cart, Jack falls onto the ground. Then we get a close up of him shaking his face, watch the bone in his hair, it's bent. Then he stands up again and the bone is straight. (00:25:40)
Continuity mistake: Just before Will sends Jack up to the rafters, A close up of Jack's face shows a single hair going across his right eye. And then it's gone as he's sent up from close up. (00:25:50)
Continuity mistake: When Jack hangs onto the beam and then in some close-ups while up on the beams, as he and Will are fighting, the large bandana around his head is soaked at his forehead. However, when he holds the gun on Will, the bandana is completely dry. (00:25:55)
Continuity mistake: Just after Jack and Will have duelled, Jack gets knocked out by the drunken Mr Brown. Norrington looks at Mr Brown and says his line, yet when the camera cuts to a different view, he is now looking at Jack and not at Mr Brown. (00:25:55)
Continuity mistake: Jack and Will jump down from the beams and Jack reaches for the bag of soot (really cocoa powder). In the back shot of Will as he approaches Jack, Will has his sword in his right hand. In the front close-up of Will as Jack starts to spray him, his right hand is NOT holding the sword - we SEE his hand when he turns. In the next wide shot, Jack is still spraying the soot, Will is again holding the sword in his right hand, then Jack kicks the sword out of Will's hand. (00:26:15)
Continuity mistake: When Jack sprays Will with the soot from the sack and kicks away Will's sword, he drops down the sack of soot onto his hat sitting on the fireplace. In the next shot, from behind Will's back, the sack of soot is not on Jack's hat, but way behind it. (00:26:20)
Continuity mistake: Either the first shot has a gratuitous view of the fort or the composite people neglected to add the fort in the second shot. Norrington says, "...this is the day that Capt. Jack Sparrow almost escaped. Take him away." The night shot that follows, shows the bridge archway, and beyond it the pier, Interceptor, the fort and its parapet. After Will breaks Jack out of prison, they approach the same archway and beyond it is the pier and Interceptor, but in this shot we don't see the fort and its parapet, nor the line that Jack slid down the day before. The camera angle is exactly the same. (00:27:15 - 00:44:30)
Answer: The curse needs the blood of everybody who took a coin from the chest. All the other pirates have already contributed so, as the movie opens, the only blood needed is Will's, substituting for his father. During the finale of the movie, Jack takes a coin from the chest, adding himself to the curse, so his blood is now required as well as Will's.

But I didn't see any blood on the coins, and none of the pirates cut themselves, even before Will became part of the mix.
Yes, the other pirates did cut themselves before Will came into it, off-screen. The lack of blood on the coins can simply be explained as most of it dripping to the bottom of the chest, it being washed away by storms blown into the cave, or by the fact that they didn't drop that much blood on it in the first place.
When they had Elizabeth they believed she was Bill Turner's daughter, but they all thought the curse had failed, none of them had cut themselves so it makes zero sense.
They had been collecting back the coins for years. During that time they repaid their own blood. All they needed was the last coin and the blood of Bill Turner to break the spell.
