Continuity mistake: Just before Captain Jack Sparrow threatens Elizabeth Swann, watch her medallion. In one shot the medallion is over her dress, but in the next one, it is under it again without anyone having touched it. In the following shot, when Jack puts the chain around her neck, it is out again. (00:18:30)
Continuity mistake: When Jack slides down the rope at the start, the arm that swung him round is facing Jacks left as he grabs the rope. Camera cuts and it is now instantly rotated 90 degrees. (00:19:00)
Continuity mistake: At Port Royal, Jack attempts to escape by holding Elizabeth hostage. After she puts his hat on in the first shot, while their bodies are extremely close, her right arm reaches under his left arm to go around his back in order to put the strap with the buckle on. Yet, in the next close-up, they haven't moved but now her right arm is over his left shoulder. Quite impossible between shots. (00:19:10)
Continuity mistake: When Jack holds the chain to Elizabeth's neck, and subsequently swings about, there are about ten links between the wrist shackles. When he tosses the links over the rope, before he slides down, there are at least fifteen attached links. Then at the blacksmith shop, when Jack sits at the anvil, there are eight links, and after he breaks it there are three links dangling from the right shackle and seven dangling from the left, totaling ten. (00:19:50)
Continuity mistake: After escaping, while Jack is swinging quickly about on the rope, in the first wide shot, he hangs low on the rope and the excess rope reaches his knees. When Jack yells, "Whoa!" he is higher on the rope and yet the excess rope still just reaches his knees. Then when Norrington shouts, "Open fire!" still higher on the rope, the excess rope is now way below his feet. (00:19:50)
Continuity mistake: During Jack's escape, as he's swinging about, in the background of this shot, the Dauntless is not seen moored, as it was in all the previous shots of Jack's opening scene, including being seen past Interceptor, from the angle of the running British Royal Navy. (00:19:55)
Continuity mistake: At the dock in Port Royal, in the close-up as Jack makes his escape from the Marines, he is standing on the beam as he throws his shackle chain over the rope. The ledge to his left, just under the rope, has a metal support that is flush with the wood's edge. In the next wide shot as Jack starts his descent down the rope, the ledge and its metal support are not the same as in the close-up, they are obviously very different. (00:20:10)
Continuity mistake: As the soldiers are firing at Jack after his escape, he runs across the footbridge. In the far wide shot, he crosses the center of the bridge and passes the man with the sack on his back. In the next close-up shot, Jack is just getting to the center of the bridge and starts to pass the man with the sack on his back. (00:20:20)
Continuity mistake: Jack hides behind a statue outside the blacksmith shop. The soldiers run past a woman and her vegetable cart whose wheels are closest to the blacksmith shop. After Jack removes his sword, he looks around the courtyard. The cart's legs are now closest to the blacksmith shop and the wheels are now at the other end, the complete opposite of how the cart was positioned in the first shot. (00:20:35)
Continuity mistake: In the blacksmith shop, next to the fireplace and anvil, there is a table with a variety of tools and other objects. The variety and placement of the items on that table changes when the table is shown. Some examples are, as Jack puts his hat down, then when Will notices Jack's hat, and later when Jack says, "Ta." (00:21:00)
Continuity mistake: At the blacksmith shop, in the close-up, the palm of Mr. Brown's hand faces upright, when he drops the bottle. In the wide shot, the palm of his hand faces down. When Jack approaches him, the palm faces up again. Also in one shot, one end of Mr. Brown's red scarf is sticking out of his smock and in the next shot, both ends are out. (00:21:05)
Continuity mistake: There are two shots of an unconscious Mr. Brown and the area around him, when Jack and Will approach him. Just before and after Jack grabs the red hot sword out of Will's hand and tosses it, Mr. Brown is seen behind Jack. In these shots Mr. Brown's placement is different in comparison to the tools above him on the ledge. Also in this shot, the tools on the floor to his right in the earlier shots, are not in the same place either. When Will says, "I practice three hours a day so when I meet a pirate, I can kill it," the actual tools to Mr. Brown's left are different. (00:21:05 - 00:24:20)
Continuity mistake: Jack sets his hat down on the fireplace, in the blacksmith shop. Sometimes the angle of Jack's hat changes, within close-up and wide shots, even while they're duelling. (00:21:05 - 00:23:00)
Continuity mistake: When Jack holds the chain to Elizabeth's neck, when he flees, while he is flying through the air, when he throws the chain over the rope, as he slides down and then runs away, the shackles go from being over the sleeves to being on his bare wrists with his sleeves pulled up, then back over the sleeves again repeatedly. Then when Jack approaches drunk Mr. Brown, the shackle is on his bare wrist as seen from the front of Jack, but in the shot from his side, the shackle is over the sleeve. This continues throughout this entire scene; Jack's left sleeve goes from under the shackle to rolled up to his elbow then back under the shackle. (00:21:15 - 00:24:35)
Continuity mistake: In the blacksmith's shop, on the two stationary wood posts near the donkey, that have the assortment of swords hanging, the direction of some of the sword handles change in some shots. Seen in the background of some shots or when Will grabs for a sword. One example is, when Jack looks at the red hot poker after poking the donkey and when Will comes in, jumps down the step, then stops the donkey. (00:21:45)
Continuity mistake: When Jack, and later Will, approach Mr. Brown we see how far apart the tables in front and to the left of Mr. Brown are. Jack breaks the chain, he hears Will and the table behind him is in line with the back door. When Jack pulls the sword out of Will's hand and tosses it, in the shot of Will the table is much closer to Mr. Brown now. After Jack says, "You need to find yourself a girl, mate" and tosses the mallet at Will, in the wide shot behind Will, we see just how close together the two tables are now. The side table is angled more towards him too. This has nothing to do with camera angles. (00:21:50 - 00:24:25)
Continuity mistake: In the blacksmith shop there's a table with asst tools. In all these shots a few of the tools are arranged differently and in some shots they're completely different tools. 1 - when Jack notices Mr Brown. 2 - behind Jack when Will starts to come into the shop. 3 - when Will says, "Right where I left you." 4 - behind Will, when he and Jack duel. 5 - behind Will, when Jack holds the gun on him. (00:21:55 - 00:26:30)
Continuity mistake: Will comes into the blacksmith shop, comments about Mr. Brown and then approaches the anvil. In this shot the wood post on his right has a hammer and knotted rope hanging together on the same side. However, later when Jack sprays the soot at Will the same wood post is seen on Will's left and the rope hangs on another side of the post, not together with the hammer. That rope changes shape and position in other shots in between too. (00:22:15 - 00:26:15)
Continuity mistake: When Will first sees the hammer it's lying on top of the anvil almost parallel with it. Right before Jack says, "You know what you're doing, I'll give you that," as Will sticks his sword towards Jack's legs, the hammer's seen to Jack's right, perpendicular to the anvil. In the next shot, when Jack actually says those words, the hammer's lying parallel to the anvil again. Jack says, "If I step here," and the hammer's perpendicular to the anvil again. Then in the next few shots, once again the hammer's parallel to the anvil. Even in the 'parallel' shots, the hammer's lying a bit differently. (00:22:25)
Continuity mistake: As Will and Jack duel, the vertical wood beam, near the cart and stone steps, is seen in many shots. In several shots the rope secured to it is either tied differently to the beam or is not even there. 1st example, when Will says, "You're the one they're hunting," and 2nd example, the wide shot before Jack says, "You know what you're doing, I'll give you that," the rope is tied differently. After Jack says, "You need to find yourself a girl, mate," but just before Jack tosses the mallet at Jack, forcing him to duck, there is no rope. Then, when they duel on the cart, in some close-ups the rope is seen, but in some wide shots the rope isn't there. (00:22:35 - 00:25:15)
Answer: The curse needs the blood of everybody who took a coin from the chest. All the other pirates have already contributed so, as the movie opens, the only blood needed is Will's, substituting for his father. During the finale of the movie, Jack takes a coin from the chest, adding himself to the curse, so his blood is now required as well as Will's.

But I didn't see any blood on the coins, and none of the pirates cut themselves, even before Will became part of the mix.
Yes, the other pirates did cut themselves before Will came into it, off-screen. The lack of blood on the coins can simply be explained as most of it dripping to the bottom of the chest, it being washed away by storms blown into the cave, or by the fact that they didn't drop that much blood on it in the first place.
When they had Elizabeth they believed she was Bill Turner's daughter, but they all thought the curse had failed, none of them had cut themselves so it makes zero sense.
They had been collecting back the coins for years. During that time they repaid their own blood. All they needed was the last coin and the blood of Bill Turner to break the spell.
