Continuity mistake: When Elizabeth stabs Barbossa, the amount of blood on the knife changes between shots. (00:56:00)
Continuity mistake: Barbossa says, "Buried on an island of the dead what cannot be found, except for those who know where it is." In this shot only the objects in the center of the table slide down towards Elizabeth, including the two candelabras and her plate of food, having nothing to do with the object's weight. The objects that face Elizabeth on the table to her left and to her right don't move, only those on the moving center track. Also seen on DVD 2. (00:56:45)
Continuity mistake: Aboard the Pearl, in the close-up of Elizabeth hiding the dinner knife in the napkin, the base of the decorative embossed silver knife handle (area of bolster, where the blade meets the handle) is flat all the way around. However, oddly enough, when she stabs Barbossa moments later, in the close-up of the knife protruding from Barbossa's chest there are two wide ridges circling the base - obviously a different knife. Continuity mistake: When Elizabeth joins Barbossa for dinner there are candelabras on the table behind Elizabeth and Barbossa and many loose candles all around. The candle heights vary in many shots. One example: when Barbossa says, "All the scattered pieces of the Aztec gold," the candles on the candelabra behind Elizabeth are much shorter than in the shot right after when Elizabeth asks, "And the blood to be repaid?" where they're much taller. Factual error: Sir Charles Wheatstone, an English physicist (b.1802 - d.1875), invented the 'concertina' around the mid 1800's. The 'concertina' is a small musical instrument like an accordion, with bellows and keys. During the Moonlight Serenade scene, when Elizabeth walks out onto the deck, she sees the skeletal pirates for the first time, and Jacoby is seen playing the 'concertina', but it was not invented yet. Revealing mistake: When Elizabeth first sees the skeletal pirates she stumbles backward, and when she lands on the tarp in the close-up, the flesh-covered thumb and part of a hand is visible behind her, at the top right, though the pirates are in skeletal form. (00:59:05)
Revealing mistake: Keira's stunt double Sonia is obvious in different shots throughout the film. When Elizabeth walks onto the deck of the Pearl, only to see the skeletal pirates, she stumbles backward and lands on the tarp, and it's very apparent that the one who comes back down from mid-air onto the tarp and goes back up is Sonia. Later on Isla de Muerta, Elizabeth whacks Jacoby (burning beard) with the gold rod and soon after she approaches a second pirate. This pirate is very pleased with himself when he takes the gold bowl off his head, and we can then see it is Sonia actually whacking him, but in the very next shot it is Keira reacting to whacking the guy. Continuity mistake: On the Black Pearl, just before Elizabeth spins the wheel on deck and knock's off Grapple's skeletal head, when she first approaches the wheel, it is fully wound up with rope. As she starts to spin the wheel, there are only about five lines of wound rope, next to the wheel. (00:59:25)
Continuity mistake: While Jack is inspecting the crew on the dock at Tortuga the sun shines from different directions in some shots. In some shots the crew's back is in shadow and in others their right side is in shadow. Also seen with the shadow of the goods in front of them, behind them, and to the left of Anamaria. This scene was shot during the course of a day. (01:01:00)
Continuity mistake: Jack removes Anamaria's hat, in the front shot her hair falls down, and in the next back shot, her hair falls again. Also, the striped scarf around her forehead changes in the arrangement of the stripes in different shots. In the front shots the yellow stripe is on top, but in the side shots the grey stripe is on top. (01:02:05)
Continuity mistake: After Jack removes Anamaria's hat and she slaps him, her hair frequently changes between front and back shots. (01:02:10)
Continuity mistake: In Tortuga, on the dock, Anamaria slaps Jack twice. In the side shot, Jack says, "You'll get another one," and she picks up her right hand and points her finger right up into Jack's face. When Will says, "That one," Jack spins around, and in this shot when he asks, "What one?" now Anamaria's left hand is the one pointing at Jack's face. (01:02:20)
Revealing mistake: On the way to Isla de Muerta aboard Interceptor, during the storm there is a close-up of Jack's hand holding the compass. There are many other close-ups of Jack's hand in the movie, but in this particular close-up, it is not Johnny Depp's hand holding the compass. Depp's fingers are slim and normal looking, but in this close-up Jack's thumb is stout and has a severely enlarged/deformed metacarpal at the base of the thumb joint (likely arthritis). (01:03:35)
Revealing mistake: On their way to Isla de Muerta aboard Interceptor, Will and Gibbs discuss Jack and his history. Seen to the left of Gibbs are some of the crew looking out while standing at the ship's rail. It is obvious in some of these shots that the background is edited, the crew have the distinguishable blue screen ring around their bodies. (01:05:50)
Audio problem: Just after Gibbs tells Will the story about Jack roping a couple of sea turtles, Jack yells out to the crew, "Let go the anchor." We hear on the audio some of the crew respond, "Ahoy Captain aye." The Region 1 DVD subtitles say, "Aye Captain aye." Yet, when you look at two crewmen's lips, it looks like something else. It possibly could be, "Let go the anchor aye." Either way, their lips do not match the audio. (01:07:40)
Continuity mistake: In the cave, Ragetti is holding a parasol over his shoulder, rubbing his eye. In the close-up, as Pintel says, "Stop rubbing it," there's no sign of Ragetti's parasol, nor any shadow on his hair or shoulders, and the folded parasol that Pintel is holding, is much lower in the close-up, than it is in the wide shot that follows and so forth. Continuity mistake: When Will and Jack are in the cave, Will goes to hit Jack with an oar, but in the previous shot we can see Jack look at Will and slightly move his body, then in the following shot he is completely facing Will ready for the hit. (01:09:00)
Continuity mistake: Before Elizabeth's blood ritual, Jack is rowing the boat into the cave and Will is holding the pole with the attached lantern. As Jack says, "Any man who falls behind, is left behind," Will is holding the pole with his left hand high up on the pole and his right down below. In the next shot, Will says, "No heroes amongst thieves," and Will's right hand is now high up on the pole. (01:09:10)
Continuity mistake: The position of Barbossa's white shirt collar varies within wide and close-up shots, during the first blood ritual with Elizabeth. (01:10:05 - 01:14:40)
Continuity mistake: Barbossa shoots Pintel and a hole appears in his shirt. This hole soon vanishes never to be seen again. (01:11:00)
Answer: The curse needs the blood of everybody who took a coin from the chest. All the other pirates have already contributed so, as the movie opens, the only blood needed is Will's, substituting for his father. During the finale of the movie, Jack takes a coin from the chest, adding himself to the curse, so his blood is now required as well as Will's.

But I didn't see any blood on the coins, and none of the pirates cut themselves, even before Will became part of the mix.
Yes, the other pirates did cut themselves before Will came into it, off-screen. The lack of blood on the coins can simply be explained as most of it dripping to the bottom of the chest, it being washed away by storms blown into the cave, or by the fact that they didn't drop that much blood on it in the first place.
When they had Elizabeth they believed she was Bill Turner's daughter, but they all thought the curse had failed, none of them had cut themselves so it makes zero sense.
They had been collecting back the coins for years. During that time they repaid their own blood. All they needed was the last coin and the blood of Bill Turner to break the spell.
