Revealing mistake: In the colour version of the battle with the Crazy 88, the Bride swings herself onto the restaurant's upper story balcony. When two of the Crazy attack her and she slashes the second one, toppling him off the balcony, he is spraying water, not blood.

Kill Bill: Volume 1 (2003)
Suggested correction: About a minute earlier in the fight (in the extended colourized version), about a half-dozen Crazy 88 members are knocked into a fountain and get totally soaked. He's one of them. If you look, you can tell his entire body is still almost dripping wet when the bride slices him. So he's not "spraying water instead of blood." Rather, the water that's already on his body is simply splashing outward as he whips around. (It's a little confusing because the black-and-white version omits the fountain shot and tries to "cheat" the water as blood since you can't tell it's not red. But in the extended colour version, it really is just the water that's soaked him that's "spraying" outwards.)
Yeah, a plausible explanation. Except that 1) when the Crazy is running onto the balcony, none of his clothes look like they're soaked. His jacket is fluttering as he moves; whereas, if it were wet, it would be hanging down. 2) His hair, when he strikes and The Bride parries just before she hits him, is showing no shimmering of wetness before he "sprays." 3) As much water as he sprays when hit, he should be dripping with water when he comes onto the balcony, which he isn't.

Revealing mistake: During the standoff scene in the shipyard, Crazy Kung drops Tarzan (Tyson) from a magnet crane before reactivating the electromagnet, hoisting him up again. At the points where Tarzan starts dropping and where his fall is halted, you see a hole in the electromagnet and wires connected to the actor's back. (01:06:35)

Revealing mistake: When Mahoney first meets Larvelle Jones at the police precinct, Jones demonstrates his vocal imitation skills by simulating machine gun fire. In the shot with the unwitting crowd, look at the police man to the far left talking to the lady with the hat. That officer ducks down a split second before Jones lets loose with his gunfire sound.

Revealing mistake: When Matrix reaches Arius' mansion (in actuality the Harold Lloyd Estate), he is rushed at by several soldiers of Arius' private army and starts shooting at them with his RPK. In one shot from Matrix's rear we can see him shooting four soldiers at the same time. However, the two soldiers on the far left drop dead even though Matrix is aiming his weapon to the right. Revealing mistake: During the film's climactic end scene, just before the dentist wagon Potter and Jane used to escape the Indian camp blows up, the two protagonists jump off the released horse team to take cover behind a tree trunk on the ground. In that instance, you can briefly see the tall frame and definitely male face of the stuntman playing Jane's part in the scene. (01:30:50)

Revealing mistake: When Potter starts shaving at the morning of the Indian attack on the wagon train, his mirror falls off the post, and as he bends down to retrieve it, an arrow embeds itself right above his head. If you look closely in that scene, you can see a length of targeting wire used to guide the arrow sticking to the post above Potter's head. (00:37:10)

Revealing mistake: When Bond stops to study the map at the beginning of the Amazon chase sequence, you can catch some brief glimpses of a black object floating in the water. This is actually the explosive charge used to simulate the initial mortar fire's impacts from his adversaries' boats. Keep a close eye on those 'shell impact' locations to spot them proper.
