Revealing mistake: Near the end of the movie just before Van Helsing drives a stake through Dracula's heart, Dracula leaps out of his coffin and impales Van Helsing with the stake. It's very clear that the person getting impaled is a stuntman with an 'Olivier' mask.

Revealing mistake: When Godell is trying to get away from the company's goons, he races to the nuclear plant gate where he'd be safe. As he pulls up to the gate, you can already see the 'donut' skid marks left in the driveway from the goons' car when it turns around. But the car turns around AFTER Godell pulls up to the gate, so the donut must be from a previous take.

Since the other guys gripe about how much Vinny is winning, neither Fiedler nor director Gene Saks must've known that his cards were visible.
Continuity mistake: At the rebel base on Hoth, the Falcon is being repaired in a hollowed-out snow cave. When Han blasts off out of the cave, none of the debris on the floor or in the cave moves at all, nor is there any effect from the Falcon's exhaust.
