Corrected entry: During the hostage siege, French terrorist Batroc, played by French-speaking Quebec-er Georges St-Pierre, shouts the command: "Partez les machines!" (Start the engines!) It might be possible this is a normal phrase in the French-Canadian language. But no French-speaking person from France (or any other part of French speaking Europe) would use the verb "partir" in this context. There are several words in French that could be used for "Start", "Demarrez les machines!" being the most obvious one. The translation for the initial command would come down to: "Make the engines go away!"

Correction: Batroc is not French, he is Algerian (a point made clear in the film when a character claims he is French). French is not the first language of Algeria so you cannot expect him to speak it perfectly. As you said, the actor speaks French as his first language and it may be a common way of phrasing the term in other dialects.
