Trivia: The bike Johnny rides is a modern version of the one Peter Fonda (the devil in this movie) rides in Easy Rider, ironically named the "Captain America." He even says to Johnny "nice bike."
Trivia: When Johnny Blaze is on the roof as the Ghost Rider, he throws the chain at the helicopter, and pulls it towards him in a straight line. When he does this, he says "Come here...you're pissing me off." This is a reference to the character Scorpion from the Mortal Kombat game. Scorpion throws a harpoon the same way in the game, and says "get over here" when he does so. Also, Scorpion's finishing move in the game shows him removing his mask to reveal a flaming skull head, just like Ghost Rider.
Trivia: Peter Fonda in both "Ghost Rider" and "Wild Hogs" makes reference, albeit subtly, to his character in "Easy Rider." Nicholas Cage parodies his dream sequence in "Raising Arizona" where his evil side is riding through the desert on a motorcycle, and shoots a lizard off a rock by the side of the road.
Trivia: Matt Long (young Johnny Blaze) used a prosthetic nose to look more like Nicholas Cage. (Stated in commentary).
Trivia: Nicolas Cage has a tattoo in real life of the Ghost Rider. Ironically, it had to be covered with make up during filming of this movie.
Answer: If you're talking about during his performances, it's a 2000 Buell X1 Lightning. He's also seen on a Harley-Davidson Sportster, I believe, when jumping through the ring of fire. If you're talking about his other bike, it's a Harley-Davidson Panhead.

Sorry. I should have been more specific as I'm not familiar with motorcycles. The one that turns into the HellCycle.
The HD Panhead is what turns into the Hell Cycle. But the Hell Cycle itself was a custom made piece, built from the ground up, but modeled after the Panhead. So there's no specific make and model, that I know of, for the custom made Hell Cycle itself.
