Continuity mistake: When Jim walks over to Maddie and Sarah after surfing at the beginning of the film, the board flips instantly between cuts between the second and third shot. (The fins are facing him in the first two shots, then facing away in the third.)
Continuity mistake: When Maddie and Sara are telling Jim about all the reasons they've had sex with men, the pile of whittled wood chips in front of Jim vanishes between cuts right as the scene is about to end.

At one point a napkin appears in front of her that wasn't there in the previous shot. Some of the silverware moves around between shots. Etc.
Continuity mistake: When Maddie's car gets pulled back up on the by the tow-truck with her inside, the angle of the car in the wideshots doesn't match the background when we see the shot of Maddie inside. (Ex. At one point, the ground behind Maddie looks almost "level" even though the car was at a near-45 degree angle in the wideshot prior.)
Continuity mistake: When Maddie tries to steal her car back from Gary, there are two girls sitting out front of the little food stand he's shopping at. At one point, they notice what's going on and get up and start walking towards the car. But then they're suddenly back to sitting a few shots later and "notice" it a second time.
Continuity mistake: In the opening scene, when Maddie is talking to Gary, the way her hair is down over her shoulders changes subtly between shots a few times despite the fact she's not moving much.
Continuity mistake: When Maddie comes out of her house at the beginning, she has her bathrobe open. She closes it, but doesn't tie it shut. It's suddenly tied shut starting in the next shot. (She's facing away from the camera, but you can tell it's tied shut from how tight the "belt" is around her waist.)
Continuity mistake: In the opening scene, when Maddie says, "How the fuck am I supposed to pay my taxes just bartending?!" her hands go from being in front of her to down by her sides between cuts.
Continuity mistake: Percy drives his parents' car into the ocean near the end. The front window is either down or up, depending on the angle.
Continuity mistake: On their first date in the restaurant, Percy's drink level changes after he spits it out.
Answer: Uber has multiple rules regarding the cars drivers are allowed to use, and the van wouldn't meet most of them. Ex. It's not technically her car, so her name wouldn't likely be on the insurance policy, which is one of the requirements. It doesn't have a proper passenger seatbelt. The condition of the van itself doesn't seem to line up with what they want in terms of cosmetics and accessibility. Etc. You can't just drive any old car you want with Uber. If she tried to, she'd probably just immediately get reported by a rider, given the van's condition.
